Optimise/minimise gstreamer-full ci build

Follow-up from !197 (comment 435257):

This seems to build a lot of stuff - do we really need to do that in order to test this?

Like can we disable some subprojects and/or disable tests/examples/benchmarks/translation/docs etc.?
