Fix srtsink crash in case no URI

Nicolas Dufresne requested to merge ndufresne/gst-plugins-bad:srt-fixes into master

This fixes a crash that occurre if you simply do .. ! srtsink mode=listener. I haven't fixed everything that annoys me, since you'll notice that there is now 3 place where the default handling is done, so consider this as the minimal fix for the problems I met.
