linux-dmabuf: mark as stable

Simon Ser requested to merge emersion/wayland-protocols:dmabuf-stable into main

This protocol extension is ubiquitous. It's time to mark it as stable.

This is the first time we do this without a new major protocol version. I've removed the "unstable" word from the protocol name, but kept the interface names as-is. Note, v2 might come in the future (#71).
