tests: rename color-shaper-matrix-test.c to color-icc-output-test.c

This is a boring but disruptive series to rename and move color-shaper-matrix stuff around.

The purpose is to put more descriptive names on things.

@vitalyp, could you review this? I wanted to get this out for you earlier rather than later.
